Amazing Egg Muffin Cups


My husband found this recipe and mentioned maybe I could make it. So he posted it on my Facebook page. My dad saw it and he wants the recipe so he can make it. SO I figured i would add it here so I can find it to make sometime this week.

Yield: 12 servings

INGREDIENTS

3 cups refrigerated hash browns, or frozen thawed
3 tablespoons butter, melted
1/8 teaspoon salt
1/8 teaspoon pepper
12 breakfast sausage links
6 eggs
2 cups (8 ounces) Shredded Mexican blend cheese ( or cheese of your choice)
1/4 cup red bell pepper, chopped or veggie of your choice
fresh chives or green onions, chopped , for garnish


PREPARATION


Spray 12 cups of muffin pan with cooking spray (be generous with the spray!)

(You can also use cupcake liners spray with cooking spray as well.)

In a bowl, combine the hash browns, butter, salt and pepper.
Press mixture onto the bottom and up the sides of greased muffin cups.
Bake at 400°F for 12 minutes or until lightly browned.

Meanwhile, cook sausage according to package directions; cut into ½-inch pieces.
Divide sausage among muffin cups.

Combine the eggs, cheese and bell pepper. Spoon over sausage. Sprinkle with chives.

Bake for 13 to 15 minutes or until set.
