Chicken Teriyaki Kabobs


I love grilling in the summer, even if it is hot out. The taste is just so worth it. Tonight I am making Chicken Kabobs. I found this recipe somewhere online a while ago . It is very simple, which I like on a day when i am just not feeling up to par . You can use any veggies you like.

INGREDIENTS

1 chicken breast per person cut into 1" inch cubes
Teriyaki sauce ( bottled or home made )
skewers
mushrooms (whole)
1 onion cut into wedges
cherry tomatoes
1 large green pepper, cut into pieces
Skewers

DIRECTIONS
Pour teriyaki sauce into a large resealable plastic bag; add chicken and turn to coat. Seal; let marinate in the fridge for a few hours, turning occasionally.
If using wooden skewers soak in water during this time so they don’t burn up later.
When you’re ready to assemble the kabobs, Remove chicken from marinade with slotted spoon; discard marinade.
Alternate meat, mushrooms, green pepper, onion and tomatoes.
Heat 1 side of gas grill on medium or charcoal grill until coals are ash white
Place kabobs onto grill. Grill, turning and brushing occasionally with reserved marinade, until chicken reaches at least 170°F or until juices run clear when pierced with fork (15 to 20 minutes).

I served them over white rice
